As we head through fall toward winter, Anna chose a menu featuring hearty and comforting dishes, with the star of the show: traditional cabbage rolls! We'll make cabbage rolls two ways, one with beef and one with mushrooms. Both include toasted buckwheat and are simmered in tomato sauce until tender perfection. Alongside these rolls, you'll make a creamy polenta-like dish called mamalyga, a herb-loaded cheese spread served with warm rye bread, and some quick pickles of seasonal vegetables.

Bright, herbaceous, rich, and comforting, we hope this meal will inspire cozy nights at home with loved ones.

MENU

Herby Namazka—Ukrainian tangy farmer's cheese mixed with herbs and served with dark rye bread.

Quick Vegetable Pickles—Traditionally paired with hearty Eastern European dishes to cut the richness and brighten up the meal.

Mamalyga—Romania and Western Ukrainian buttery polenta-like kasha. Served with sheep's milk feta and crispy fried shallot.

Cabbage Rolls Two Ways—With beef and with mushrooms.

Anna Voloshyna was born and raised in Ukraine and lived there for twenty years before moving to the United States. After coming to the Bay Area, Anna started working as a food photographer and stylist, helping chefs and culinary brands tell their stories through her camera lens. After numerous photoshoots and exciting cooking endeavors, Anna was finally offered a chance to unveil her own food-making talents through hosting Eastern European pop-up dinners. Her Georgian khachapuri nights and Ukrainian varenyky feasts became a delicious sensation in the San Francisco culinary community. Now Anna’s goal is to make people fall in love with Eastern European food through every little Ukrainian dumpling, fluffy garlic pampushki, and every single bowl of luscious borscht you will cook from her new cookbook Budmo! Recipes From A Ukrainian Kitchen, which will be released in October 2022 (click here to pre-order).
