Understand how to build complete, nourishing meals in one pot. Side dishes optional!

This class is for anyone who wants to eat well without juggling three pans and a pile of side dishes. We’re focusing on cozy, flavor-packed vegetarian meals that come together in a single pot or pan—simple enough for a weeknight, satisfying enough to crave again tomorrow. You’ll learn how to build depth with aromatics, spices, and umami boosters, how to balance textures and cooking times so everything lands just right, and how to get confident cooking from what’s already in your fridge and pantry. We’ll talk through smart shortcuts—like when canned beans are your best friend—and how a few hero ingredients in your pantry can save the day. 

Expect recipes that feel a little special but don’t ask too much of you—just enough technique to make things sing, and enough flexibility to make them your own.

Marie Brennan is a vegetable enthusiast, keen fermenter and an avid traveler. Her explorations are fueled by the desire to find her next pantry staple and learn yet another way to use onions. Her culinary focus is vegetarian, Californian cuisine that is imbued with global flavors. Her classes are known for their healthyish and punchy flavors as well as her non-dogmatic and enthusiastic approach to food. Marie graduated from the University of Wisconsin with a degree in Dietetics and in 2014 moved to California to attend culinary arts school. She stayed for the produce and the sunshine.
