“DAREYAME” is a special word only used in southern Japan, which means: to heal the stress and tire from work of the day and to bring energy towards tomorrow by having dinner with family. This is the mission of a group of chefs and artisans from Kagoshima and they are passionate about sharing it with the 18 Reasons community. Joining us from Japan for one evening only, they will prepare a multi-coursed meal marrying San Francisco's local ingredients with Japan's culture, traditional cooking techniques, and unique flavors. 

Authentic Kagoshima Japanese food will be served on imported ceramics alongside the diner's choice of wine, beer, or sake.

MENU

Hakusai-sanbaisu - Pickled napa and celery
Shiraae - Salad of greens and stone fruit dressed with tofu, white sesame, white miso
Satsumaage - Deep-fried minced fish and vegetables
Kakiage – Deep fried vegetables, served with special salt
Tonkotsu - Pork belly and bones, simmered with dashi, sake, seasonal vegetables
Nishime - Vegetables such as taros, carrots, konnyaku, and more, cooked almost to dryness in artisan soy sauce 
Keihan – Traditional dish from Kagoshima, rice bowl with soup, with chicken, eggs, pickles 
Gajyamame (Peanut brittles) – Peanuts coated with brown sugar from Kagoshima
Japanese Tea tasting – Japanese green tea demonstration and tasting 

Chef Hirohisa Ijuin was raised in Kagoshima. His mother was a great house chef and always had great meals at home. After graduating college, he started his career in the food world, first as a barista in a coffee shop, then in various restaurants around southern Japan. In 2013, Hirohisa started a catering team and became well known for his ability to prepare the highest quality, traditional food. In 2015, he started "THE TABLES" to introduce the food culture of Kagoshima and to instruct the food tradition to younger generations.
