You haven't lived until you've tried a Swedish-style hot dog! And what is that exactly? In Scandinavia, it's common to top hot dogs and sausages with mashed potatoes, creamy Bay Shrimp salad, pickled beets, pickles, coleslaw, and crispy onions. The end result? A flavor combination that will surprise your taste buds, but they will dance!

We're happy to welcome Chef Hej Hej (aka Amelia Eudailey) to her first 18 Reasons class! You might have seen her Swedish Hot Dog pop-ups in the Bay Area. With Amelia as your teacher, we'll learn how to build a hot dog the Swedish way with a variety of toppings and side dishes. Then, we will have a hot dog eating conte- just kidding! Afterwards, we will sit down and enjoy dinner over traditional Swedish song and cheers.

Swedish Style Hot Dogs, featuring Olympia Provisions pork sausages (vegetarian alternative available upon request) along with:

Creamy Bay Shrimp Salad: A classic shrimp salad in Sweden, known as räkssallad or skagenröra, that combines mayonnaise, greek yogurt, fresh lemon, shallot, and dill, tossed with pre-cooked bay shrimp. We will enjoy this atop hot dogs, but it also shines atop toasted rye bread, or inside mini phyllo cups.

Lion's Mane Mushroom "Shrimp" Salad—Amelia developed this vegetarian alternative to the classic shrimp salad. It has a similar texture and sweetness that appeals to vegetarians and seafood eaters alike.

Pommes Aligot "cheese pull" Mashed Potatoes—When Amelia started selling Swedish hot dogs, she knew she didn't want to use just any mashed potato recipe. Having studied abroad in Aix en Provence in college, she had her first pommes aligot "cheese pull" potato - more cheese than potato and a rich, decadent, binder for the hot dog and the bun. Also a great recipe to have in your back pocket for dinner parties!

Amelia Eudailey has been hosting friends and sharing Swedish food traditions with those around her since she can remember. While she grew up in the States, she has traveled frequently to Sweden throughout her life and has fond memories of eating strawberries with milk on the porch during Midsommar and waking up craving slices of crispbread layered with cheese and butter for breakfast. Amelia wouldn’t be Swedish without having an obsession with candy, and she regularly requires at minimum two pounds of the godis to come home with her on every trip.

After moving to San Francisco in 2020, Amelia immediately became enamored with the food scene. While most of her experience is self-taught, Amelia has also worked as a line cook at the acclaimed restaurant Octavia, which fed her dreams and led her to launch Hej Hej, her viral, crowd-favorite San Francisco pop-up featuring Swedish hot dogs and other delights.
