Our French cuisine teacher Zoe’s favorite dish from her childhood, growing up in Paris was brandade de Morue; a mixture of salted cod with whipped potato purée and roasted garlic. A staple served every week in her home. Brandade de Morue elevates modest ingredients like salt cod and potatoes by whipping them in milk, olive oil and garlic to create a rich and silky dish. It’s a perfect example of how the most humble of ingredients can be elevated and transformed into a comforting yet elegant meal.

MENU
