The quickest way to fall in love with the Basque Country is to spend an evening wandering its pintxo bars. Each stop offers something different—a perfectly composed bite, a local wine or cider, and a room buzzing with conversation. It's a way of eating that's leisurely, communal, and humble yet luxurious.Â
After many memorable nights exploring the streets of Donostia and learning from Basque friends and family, Chef CJ is excited to take you on a tour of some of her favorite pintxos. In this class, we'll prepare a variety of iconic small bites, learn the techniques behind them, and gather at the "bar" to enjoy them together. You'll leave ready to host your very own "Txikiteo" at home, and you might even be tempted to start planning your own trip to Donostia!

CJ Villareal
CJ Villareal's love for food began at age six, when she insisted on baking her own birthday cake wearing nothing but a red plastic chef's hat. As an adult, she has meandered across the US, Europe, the Arab world through roles including baker, line cook, Arabic professor, translator, intercultural dialogue facilitator, corporate leadership trainer, and now, therapist and chef instructor. Across all of them runs a fascination with how people connect—with themselves, with one another, and with the worlds they come from. For CJ, cooking is a practice that encompasses self-care, mutual aid, grounding, cultural preservation, and sensory delight. Her philosophy in the kitchen is equal parts romantic and pragmatic: keep it simple, trust your intuition, and always taste as you go.
