Korea's Comfort Soup: Kalguksu

For the wet rainy season ahead, we could not think of a better dish to cook than Kalguksu! This comforting soup has a long history and is still beloved today. Translated as “knife noodle soup,” kalguksu features rustic wheat flour noodles cut by hand. It is traditionally paired with a fresh, unfermented kimchi.
In this class, we’ll make the dough from scratch, which we will roll out and knife cut to make noodles. There are many broth variations, but Chef Polly will share her family's favorite recipe: anchovy broth and clams.

Polly Sang
Polly Sang was born in Busan, South Korea and immigrated to Queens, NY, with her family as a young child. As her mother worked, Polly put together the family’s meals; as an adult, she attended culinary school and worked in restaurants in NYC and California. Mentoring and teaching cooks was her favorite part of being a chef. For the last 3 years, she’s taught full-time, covering everything from culinary basics to elaborate meals. Teaching Korean cuisine is a way to share her heritage while building a community of home cooks!
