Gathering around a table for a meal at home is a traditional way to eat together. In this class you will make three dishes for a family meal that also celebrates what beautiful ingredients we are able to source in the Bay. Together, we will create dishes that sing on multiple notes of flavor: savory, sweet, spicy and plenty of umami. While each dish has its own identity, together they become a medley of a meal.The great part about these recipes is that you can make any single dish on its own (with rice) and have a tasty meal in itself! Whether this menu becomes something to gather around or something nice for yourself, you will walk away with a greater appreciation for Vietnamese dishes rooted in the home.

Paulette Tran's cooking and culinary background is rooted in their upbringing as a first generation Vietnamese, discovering their grandparents' backyard in Eastside San Jose. Â From the herbs, plants, and fruits to making nuoc mam at 9 years old, it was clear that cooking was not only a life skill, but a passion and a love language. Â Paulette later merged cooking with their social justice work in education, and began empowering youth through exploring food options and teaching cooking skills. They also have created curriculum and taught others how to guide young neurodivergent adults to menu plan, grocery shop, and cook their own meals by following a recipe. Currently, they still teach culinary to high schoolers in Oakland, while taking care of their cafe and farmers market stand,3 Bottled Fish.
