Take a trip through Italy and learn how to make its classic pastries. Channel your Italian grandmother and transport yourself to Florence, Southern Italy, or the Tuscan Hills for a rustic family meal.
For our savory needs, we’ll make breadsticks and pizza. First, we’ll roll tall, thin grissini breadsticks. Wrap them in a nice napkin or stand them up in a tall glass for a dramatic presentation. Pizza Rustica is a rich, ricotta-stuffed pie traditionally baked for Easter in Southern Italy. This sturdy pie fares well transported to a seaside picnic.
For sweets, we’ll make quite a few! First, the Torta Della Nonna: there are as many beloved variations of this tart as Italian grandmothers. Originally from Tuscany, this sumptuous torta offers a slice of Tuscan indulgence, with a sweet pastry base giving way to a lemon and vanilla-scented custard filling topped off with crunchy pine nuts. Of course, we can’t skip the twice-baked biscotti for dunking (in coffee or vin santo!). And lastly, a cookie from Siena: ricciarelli, which are popular for Christmas. They are rolled in powdered sugar and melt in your mouth.
We’ll taste everything we’ve made at the end of class, rounding out the menu with a seasonal vegetarian salad, and toast to a job well done with a glass of wine! Any leftover sweets will be divided and sent home with everyone.
