Journey with us to the Yucatan Peninsula, by way of the table and learn how to make Pollo Pibil. You might be more familiar with it as Cochinita Pibil, but here, we are using chicken instead of pork for a tender, succulent, well-seasoned dish that cooks in banana leaves. You'll leave with confidence in recreating the dish at home and its accompaniments: habañero salsa, pickled red onions and homemade corn tortillas. Plus, we'll make Arroz Verde, an herbaceous green rice to go on the side with roasted veggies and a decadent dessert of Choco-Flan.
