Let’s make mooncakes together and celebrate the Harvest Festival! This Chinese holiday is also called the Full Moon Festival or Mid-Autumn Festival and is just around the corner!

Mooncakes come in different shapes and flavors depending on the region. This year, we will make the Suzhou style savory mooncake, which is a baked mooncake featuring a flaky crust and filled with pork seasoned with sesame and soy.

Additionally, we will make the popular and photogenic (i.e. Instagram friendly) snowskin mooncake, which originated in Hong Kong. These mooncakes aren’t baked, and their translucent thin skin envelops a sweet yellow bean filling. To round out the meal, we’ll make three cup chicken, a popular dish in Taiwan. This hearty dish of simmered chicken is richly flavored with sesame oil, rice wine, and soy sauce.

Linda Tay Esposito is a teaching chef whose food represents a tribute and a commitment to the authenticity of the cuisines of the Pacific Rim. For the last 18 years, Linda has shared her passion and knowledge of East and Southeast Asian cuisines in the Bay Area by teaching at many notable cooking schools in the Bay Area. An all around food professional, Linda expanded the distribution for artisan tofu maker, Hodo Soy, and led the development of La Cocina’s municipal marketplace, where she uses food as a creative approach to economic development. Linda's specialties include Malaysian cuisine, Chinese cuisine, various Southeast Asian cuisines, and private classes and dinners at 18 Reasons.
