Street food is one of the great pleasures of travel, and South Korea does not disappoint. In the pedestrian-friendly neighborhoods of Seoul, vendors turn tiny portable kitchens into full-blown flavor machines, serving sizzling pancakes, chewy rice cakes, and sweet griddled treats under vinyl awnings and bright lights.
The catch? Korea is not exactly a vegetarian paradise. Many dishes that look plant-based are made with anchovy broth, fish cakes, meat, or other ingredients that are easy to miss if you don’t know what to look for.
Marie spent many years in South Korea and considers it her second home. In this class, she’ll share vegetarian versions of some of her favorite Korean street foods: crisp-edged mung bean pancakes made from a savory bean batter, chewy rice cakes in a spicy-sweet sauce, and two styles of hotteok made from one versatile dough, one stuffed with savory glass noodles and vegetables, the other with cinnamon, sugar, and peanuts.
