Forget taco night, when you can have tostada night! Tostadas are the crunchy cousin of the tortilla and a weeknight wonder for real fast dinners. Annelies will show you how to make two kinds of tostadas with all the fixings. First, you’ll make savory vegetarian refried beans to pair with cauliflower and a zesty salsa macha (inspired by Doña in Oakland). The second tostada features a crunchy wrap with a vegan taco meat crumble (made of walnuts and bulgur). You’ll char scallions to add oomph to crema, and top with a homemade mild salsa casera.
This flavorful menu is great for casual home cooks and will satisfy picky eaters - a win-win combo for the summer!
