The Basque Country has held a special place in CJ’s heart ever since she first traveled to northern Spain. Despite being one of Europe's oldest and most distinct cultures, the Basques have fiercely preserved their language, traditions, and identity while building one of the world's most celebrated culinary scenes. It's a place where recipes are passed down through generations, yet innovation is embraced with equal enthusiasm—a balance that makes Basque cuisine unlike any other.
Over the years, CJ has had the privilege of learning from her Basque in-laws and spending time cooking and eating her way through northern Spain. In this class, she’ll share some of her favorite recipes, stories, and traditions as we prepare a seasonal Basque meal together. Along the way, we'll explore the techniques and ingredients that define the region—from humble home cooking to the flavors that have made Basque cuisine famous around the world.

CJ Villareal
CJ Villareal's love for food began at age six, when she insisted on baking her own birthday cake wearing nothing but a red plastic chef's hat. As an adult, she has meandered across the US, Europe, the Arab world through roles including baker, line cook, Arabic professor, translator, intercultural dialogue facilitator, corporate leadership trainer, and now, therapist and chef instructor. Across all of them runs a fascination with how people connect—with themselves, with one another, and with the worlds they come from. For CJ, cooking is a practice that encompasses self-care, mutual aid, grounding, cultural preservation, and sensory delight. Her philosophy in the kitchen is equal parts romantic and pragmatic: keep it simple, trust your intuition, and always taste as you go.
