This three week series is ideal for the home cook who is truly ready to level up. Students will spend each class building their skills set - starting with knife skills, simple roasting and learning the keys to a well balanced, mouth watering vinaigrette. Week two will focus on pureeing a beautiful seasonal soup, making fresh focaccia, braising, baking and seasoning to perfection. On the third and final night of class, students will learn to cook a steak, bake a flourless chocolate cake, confidently take on deep frying and more! The best thing about this class - you get to cook with the same group of eager, passionate people three weeks in a row and Chef Gracie is more than happy to adapt menus to meet your curiosity and desire. Come hungry and leave with an incredible repertoire of techniques and recipes that will serve you in your quest for a more delicious life!

Day 1: Monday, May 4th

Knife Skills: Peanut Sauce Noodle Salad with Fresh Herbs and Vegetables 

Vinaigrettes: Lime and Shallot Oil

Frying: Shallot Rings

Roasting: Spatchcocked and Roasted Whole Chicken and Tofu 

Stock: Chicken Stock
 

Day 2: Monday, May 11th 

Doughs: Fresh Herbed Focaccia

Soup: End of Summer Tomato Soup with Basil Creme Fraiche and Fried Basil Leaves

Searing and Braising: Chicken Thighs with Cherry Tomatoes, Olives, Wine and Capers 

Fregola with Calabrian Chili, Preserved Lemon and Herbs 

Baking: Grape and Fig Galette with Fennel Pollen Cream 
 

Day 3 : Monday, May 18th

Salad: Little Gem, Sweet Corn, Avocado, Garlic Croutons and Green Garlic Dressing 

Frying: Vegetable Fritto Misto with Tarragon Aioli

Pan Searing: Dry Rubbed and Seared Ribeye Salsa Verde 

Blanching: Broccoli Raab with Garlic, Lemon and Chili

Baking: Flourless Chocolate Cake with Fresh Berries and Bi-Rite Creamery Ice Cream
