Ichiju Sansai, the traditional meal structure meaning “one soup, three dishes.” is more than a recipe format; it is an expression of balance and harmony — a way of eating that connects nature, seasonality, and nourishment.
In this online class, Camila will guide you through preparing a full Ichiju Sansai meal, including making dashi from scratch, an essential umami base in Japanese cuisine. She’ll share her perspective on traditional Japanese cuisine (washoku), informed by her travels and studies of Japanese cuisine and culture. She’ll present options and alternatives for different types of diets or seasons of the year. You’ll leave class knowing how to draw from this traditional meal structure and adapt to your modern kitchen.
